Rong Li, associate professor of supply chain management in the Whitman School of Management, was quoted in the Food Quality & Safety story “” The article discusses how the COVID-19 pandemic has uncovered many flaws in the food supply chain, which are “pervasive and unpredictable in scope and duration.” Professor Li, an expert on supply chain management and risk, says that the pandemic has specifically forced meatpacking plants to be better “equipped to deal with food safety issues that come from the employee and the shortage of labor.”
