]]> Jessica Garay /faculty-experts/jessica-garay/ Fri, 10 Dec 2021 19:01:13 +0000 /?post_type=faculty-experts&p=171679 Jessica Garay joined the Department of Nutrition and Food Studies in 2018. Dr. Garay’s research interests center on the short- and long-term effects of adolescent and adult health behaviors, with a focus on dietary patterns (including dietary supplement use) and physical activity. Currently, Dr. Garay has two active areas of funded research: the effect of stress on health behaviors during pregnancy and the relationship between dietary intake, body composition, and exercise performance among female athletes. Dr. Garay’s work has been published in the European Journal of Applied Physiology, Medicine & Science in Sports and Exercise, the American Journal of Human Biology, and Current Biomarker Findings, among others. She has presented at the International Society of Behavioral Nutrition and Physical Activity Conference and the NYS Academy of Nutrition and Dietetics (NYSAND) Annual Meeting. Dr. Garay teaches NSD 225: Nutrition in Health, NSD 343: Dietary Supplements, NSD 425/625: Nutrition for Fitness and Sports, and NSD 457: Research & Evaluation in Nutrition. Dr. Garay is the recipient a 2016 Emerging Dietetic Leader Award from the NYSAND and currently serves as its public policy coordinator. She also currently serves as a lead evidence analyst for the Academy of Nutrition & Dietetics’ Evidence Analysis Library. Previously, Dr. Garay worked at Utica College as an assistant professor of biology: physiology & nutrition since 2016. From 2010-2016, she was an adjunct instructor at ϲ and has held positions at Onondaga Community College and George Washington University. She has worked as a practicing dietitian at the Washington Cancer Institute and Food Bank of Central New York.

 

]]> Chaya Lee Charles /faculty-experts/chaya-charles/ Fri, 10 Dec 2021 18:34:18 +0000 /?post_type=faculty-experts&p=171671 Prior to her appointment as assistant teaching professor, Charles has worked as an adjunct instructor in the Department of Nutrition and Food Studies at Falk College since 2014. In addition, she is currently a consultant dietitian for Sodexo at Menorah Park and senior nutrition consultant for Oswego County Opportunities. She has previously held titles such as outpatient dietitian, clinical dietitian, and nutrition services manager at various health care facilities.

Charles completed both her B.S. degree in nutrition, and her M.S. degree in nutrition science at ϲ. Her master’s thesis is titled “Comparing Vegan and Vegetarian Attitudes, Beliefs and Perceptions with Risk for Disordered Eating Behavior.” She is also published in the Journal of the Academy of Nutrition and Dietetics.

Charles is a board-certified specialist in gerontological nutrition, a registered instructor for the National Restaurant Association’s ManageFirst Program courses, ServSafe certified, and certified in food and beverage cost control. She is the recipient of the 2014 Sodexo Clinical Innovation Award, 2011 Sodexo Northeast Regional Dietitian of the Year, and winner of the 2010 National Sodexo Nutrition Outcomes Study.

]]> Sudha Raj /faculty-experts/sudha-raj/ Mon, 06 Apr 2020 14:22:53 +0000 /?post_type=faculty-experts&p=155826 Sudha Raj is a Teaching Professor in the Nutrition & Food Studies department in the David B. Falk College of Sport and Human Dynamics. Dr. Raj’s research and curricular development interests extend into the areas of vegetarian nutrition, integrative and functional nutrition and traditional food and medical systems such as Ayurveda.

Dr. Raj is interested in exploring the role of acculturative factors as they impact the health and well-being of Asian Indian immigrants specifically from India. She has developed dietetics related educational resources, written book chapters and given presentations highlighting the unique Asian Indian culture, food habits and role of food as delineated in the traditional medical system of Ayurveda. She was instrumental in developing and implementing one of the first pilot studies to investigate dietary acculturation patterns in Asian Indian immigrants in the U.S. Recently she was one of two academy members responsible for the inception of the Member interest group for Asian Indians in Dietetics.

Dr. Raj has been actively involved with the Academy of Nutrition and Dietetics. She has served as Newsletter Editor, Chair for the Vegetarian Nutrition Dietetic Practice Group and Chair for the Vegetarian Nutrition Evidence Analysis Group.

Raj received a B.Sc. degree in Nutrition and Dietetics from Madras University and M.Sc. degree from Bombay University in India. She subsequently completed her M.S and PhD degrees in Nutrition Science at ϲ.

]]> Margaret Voss /faculty-experts/margaret-voss/ Tue, 03 Jul 2018 14:54:00 +0000 /?post_type=faculty-experts&p=134440 Dr. Margaret Voss teaches courses in nutritional biochemistry and metabolism in the Department of Public Health, Food Studies, and Nutrition. She received her Ph.D. from ϲ for doctoral work in comparative physiology (foraging behavior, energetics, and reproductive physiology). Her research focus is on vertebrate metabolism and incorporates the study of feeding behavior and energy balance. She works collaboratively as part of a large multi-university project to identify physiological mechanisms underlying latitudinal variation in vertebrate metabolic rates (parental and embryonic). Her current project examines the role of embryo metabolites as attractants for an invasive parasitic fly that is threatening to push several species of Darwin’s Finch to extinction.

Dr. Voss has published several papers that clarify how changes in photoperiod may accelerate embryonic metabolism and interact with clock gene control of ovulation. She has recently submitted a proposal to the National Science Foundation (NSF) to further examine how photoperiod, genetics, and diet interact to influence metabolic health. The project makes use of a free living avian system to model “shift work” under artificially extended photoperiods and to track associated changes in the circadian regulation of glucose and lipid homeostasis and steroid biosynthesis.

Dr. Voss is an associate editor for the Journal of Renewable Agriculture and Food Systems. She has served as book review editor and as an officer in her professional society, and is an elective member of the American Ornithological Union. Dr. Voss is an ad-hoc reviewer for several journals, including Behavioral Ecology, Proceedings of The Royal Society, Journal of Applied Ecology, Behavior, The Journal Ethology, The Journal of Thermal Ecology, Ibis, Functional Ecology, and Behavioral Ecology & Sociobiology.

Dr. Voss’ teaching expertise is in physiology-related courses for pre-health professions students, including classes in exercise physiology, nutritional biochemistry, micronutrient and macronutrient metabolism, and medical terminology.

Prior to joining the faculty at ϲ, she was a clinical site coordinator for dietetics students at California State University of Los Angeles where she placed interns in their supervised practice rotations. She also taught medical nutrition therapy, lifecycle nutrition and sports nutrition. Jane’s past experience includes provision of nutrition care to hospitalized patients as a clinical dietitian, clinical nutrition manager and then as a food service director in several states including Maryland, Kentucky and California.
